Jeon 전 Korean Pancake


Jeon meaning pan fry (煎 in hanja) is Korean pancake that you can basically put anything in it; meat, seafood and vegetable of your choice. Apparently Korean mothers used to make this for the children when it rained and what a superb idea to keep the little ones happy and quiet indoor (I guess nowadays they will be very happy with their video games ). I served this a an entree when P and D was here on saturday.

I used chinese chives, red pepper and pork marinated with soy, pepper, ginger and garlic...

In a bowl, mix 1 part of pancake flour, 1 part of water and an egg...

Add pork and mix everything well...

Place some batter onto a hot plate and arrange the vegetable on top immediately, flip it over after 5 minutes...

Flip it over again and fry for another minute or so...

Cut it up..

And serve hot with the dipping sauce.

for the sauce;
mix 3tbs of Korean soy, dash of sesame oil, juice of half a lime, grated ginger and garlic.
