A refreshing and visually stunning salad that goes equally well with grilled meat or fish like salmon or trout. It was a shame I was unable to get any blood oranges which would have added even more colour to this dish.
You'll need these.
Citrus skinned and segmented.
Place citrus segments on very thinly sliced fennel, top with fennel tops and dress with a apple cider vinaigrette.
Mix well and ready to be served.
