Arancini - Little "Blood Oranges"




What was I thinking cooking such a big pot of risotto? No, I was not planning on making arancini the next day, but it is the only thing I can think of with all the leftover risotto in the fridge (both tummies took some to work as well). Arancini means little oranges and these are like little blood oranges, but only more delicious.
P.S you may use any leftover risotto for this.



makes 12
you'll need;
2 cups of leftover risotto (from HERE)
1 egg
breadcrumbs
oil for frying
rocket (optional)



Place left over risotto with an egg (beaten if possible) and mix well



Form the rice mixture into the size of an egg and coat of breadcrumbs.



Fry risotto balls in batches til golden and drain well.



Serve immediately on a bed of dressed rocket.

  9. Looks perfect! good enough to eat again. I have done that with leftover risotto. Having only 3 in my family we always have leftovers and I have to find ways to use it. I hate wasting food (my mum taught me that).

    The "This" link is not working. So i don't know what risotto yo are using cause I remember that your previous risotto wasn't beet red.
    But what a lovely way to use leftover risotto. Splendid! I still have Roti Jala on my mind though. I don't have the special 3-hole funnel you used..but I want to try it so bad, i am exploring the options of using the "Murukku" mould.Happy Weekend!
