Steamed Fish With Black Bean Sauce 豆豉蒸魚


This is another wonderful way of cooking fish; no frying, no oily kitchen and always very popular with the tummies. It is possible to get ready made black bean sauce in jars these days but it is so much more satisfying to prepare your own sauce without any harmful preservatives at home. It might look quite similar to my last steamed fish dish (Steamed rockling with hot and spicy bean sauce) but it tastes completely different and just as delicious!
P.S a bag of fermented black beans costs less than $2 compared to a $5 jar, you do the maths!



serves 4 as part of a Chinese meal
you'll need;
600 g of rockling or other white fish
2 spring onions, julienne
1 red chili, julienne
1/2 cup of coriander leaves

for the sauce;
3 tbs of fermented black beans, rinsed and drained
2 tbs of sugar
2 tbs of light soy
1 tsp of sesame oil
1/3 cup of stock
1/3 cup of Chinese cooking wine
1 shallot, chopped
3 garlic cloves, chopped
5 cm knob of ginger, chopped
2 bird chilies, chopped



Chop the aromatics.



Mash black beans with the back of a spoon then add in seasonings and stock.



Saute chopped ingredients with a little oil for about a minute.



Add black bean sauce mixture and continue to cook til syrupy. Mix in cooking wine.



Place fish fillets in a shallow bowl that would fit in your wok or steamer. Fill wok with boiling water and steam fish on high heat for 10 minutes. Check doneness after 8 minutes.



Remove fish from the steamer and garnish with spring onions, chili and coriander leaves.



Serve immediately with plenty of steamed rice.
