Achart อาจาด Cucumber Relish
We like to prepare a simple cucumber relish whenever a yellow curry or a masamun curry is served. This refreshing and colourful side dish helps to cut down the richness of both curries mentioned. Not dissimilar to the cucumber and pineapple pickle I posted a while back; but it is a lot fresher without salting the cucumber first and lime juice is used rather than vinegar. Each family has a version slightly different from the next and this is our very own.
serves 4 as a Thai said dish
1 telegraph cucumber, partially peeled, seeded and sliced
1 small red onion or 3 shallots, thinly sliced
3 bird chillies, sliced
1 bunch of coriander leaves, chopped
2 tbs of sugar
juice of 2 limes
a dash of fish sauce (optional)
Mix everything well and leave it the fridge til needed.
A colourful and refreshing side dish for yellow or masamun curry.
