Bbq Chicken Marinated With Homemade Sauce


A wonderful easy dinner solution whenever we decide to have dinner together on a Saturday or Sunday night. Chicken is butterflied and marinated with my homemade Anglesea spicy sauce , chuck it onto the bbq while you prepare your salad or other side dishes. Use chicken maryland if you are not very keen on dealing with a whole chicken. Marinate the chicken for at least 2 hours or overnight will be even better.
This is perfect for the new round of heat waves that arrived today; turn on the barbie and have your cold beer ready! The best thing is most men will be fighting to be in charged or the bbq.
P.S this is equally delicious roast in the oven at 180c for 40 minutes.

serves 3 to 4 with side dishes
you'll need;
1 free range chicken
chopped parsley
salt and pepper to taste
2 lemons

Butterfly a free range chicken, add 2 tbs of Anglesea spicy sauce, juice of one lemon, salt and pepper and chopped parsley.

Marinate chicken for at least 2 hour or overnight.

Bbq chicken skin side up for 10 minute on medium heat. I cover the hood for a more smokey flavour. Turn the chicken over and bbq for another 10 minutes.

Baste chicken with the marinate from time to time, 10 minutes more on this side.

Another 10 minutes on the other.

Rest the chicken for 10 minutes before cutting into manageable pieces. A squeeze of lemon all over the chicken pieces.

We had it with roasted kiflet potatoes and baked leek in foil bag with mustard dressing. Extra spicy sauce was added of course!

  2. I am really sad to see all this because I am trying to start coking from a week, after the shift to the new home and until now the success rate is zero. :(

    I have to settle all my works aside and then start arranging the utencils and kitchen equipments. The new kitchen is too big in size and resembles a play ground. I do not have the utencils that can fill the kitchen.

    Let me try to find some interior decorators to make my work easy.

    Until then I am planning to bookmark all the recipes. Chicken appears great boss!!
