Stir Fried Glass Noodles With Duck And Vegetables 鴨絲菜絲炒粉絲



Day two of my duck dinner - I decided to cook another noodle dish but this time a different type of noodles in a quick stir fry. Again this is a very good example on how you can whip up a delicious meal in no time using whatever you have in both your fridge and your pantry. Lets see what I found and what I made at the end. Feel free to use any type of noodles, meat and vegetables your little heart desires.
P.S Dishes made using glass noodles are often serve as part of a normal meal with rice and other dishes.



serves 2 as a one dish meal of as part of a Chinese meal
you'll need (what I found);
3 packets (150 g) of glass/mung bean noodles, soaked in warm water for 10 minutes and drained well
1 carrot, julienne
1/4 cup of dried Chinese mushrooms, soaked in hot water for 15 minutes, drained
1 bokchoy, finely sliced
1 duck breast* finely sliced
1 egg, beaten and made into thin omelet, sliced
1 garlic clove, chopped
1 tbs of dark soy
1 tbs of light soy
1.5 tbs of oyster sauce
dash of sesame oil
dash of white pepper
salt to taste
1 red chili, julienne
1 spring onion, cut into 3" length then julienne 
* marinate duck breast with some hoisin sauce, soy and five spice powder. Wipe off marinade before cooking. Pan fry duck skin side down for 2 minutes then another minute on the other side. Drain off fat and place in the preheated oven at 180C for a further 6 to 7 minutes. Rest before slicing. I cooked all my duck breasts in one batch.



Prepare all the ingredients. Cut everything in similar shape, it will give you an even cooking and better looking dish. I would have prepare the vegetables and meat a little differently for a hor fun (wide rice noodles) dish.

Soak and drain the noodles well.

Saute garlic in a little oil, all in mushrooms and carrot and give it a quick stir before adding the noodles and mix well.

Next add in bokcoy and duck pieces and seasonings. Fry on high heat for another minute of two, use a pair of chopsticks to help mix up the ingredients. This is all done in a matter of minutes so do have everything close by. Check for seasonings.

Serve and top with sliced omelet and julienne chili.

I love eating this with some cut chili in soy on the side.

  1. the last time we went to the Asian market I was looking for the duck breast (for a previous duck post of yours) in the frozen food section but was only able to find whole duck- such a bummer-
    I love cooking with glass noodles- actually I like saying 'glass noodles' sounds magical.

  2. I have never tried mung bean noodles in stir fries, only in soup. Looks very delicious and I will have to give it a try!

  3. mmm... this is a delicious noodles. I prepare it in a different way and I havent tried the noodles so thin.

    I use a lot of vegetables and cook it. Will try this recipe but not sure whether this noodles are available.

  17. Great looking dish, must taste heavenly with duck meat! Sadly nowadays I find glass noodles hard to digest, maybe machine needs overhaul! Glass noodles stir-fry is quite popular amongst the Hokkiens.
