Carrot Soup From The Tummies' Kitchen



Soup diet day 3 - After the unwelcomed hot spell we are getting rather wintery weather for the last few days, so it is perfect weather for our soup diet nights to take place at the moment. I have decided on carrot soup but since I don't really want our dinner to look like baby food, I added cumin roasted carrot and walnuts for extra texture. The tummies were very happy with their dinner and I certainly will be making this again soon.
P.S I must say after this meal, I'm very convinced that vegetarian food can be sexy and tasty too!

serves 4
you'll need;
1 kg of carrot, diced
2 onions, chopped
2 bay leaves
1/2 tbs of ginger powder
1/2 tbs of cumin powder
2 l of vegetable stock
salt and pepper to taste

you'll also need;
1/2 kg of carrot, sliced at an angle
1 bulb of garlic, peeled
dash of olive oil
1 tbs of cumin seeds
salt and pepper to taste
handful of walnut
chopped parsley
sour cream, thinned out with a little water

Saute chopped onions and carrots til soften slightly.

Add stock, bay leaves, spices and season with salt and pepper. Simmer gently for about 45 minutes.

Blend it til smooth and pass through a fine sieve.

Meanwhile place carrots, garlic in a pan, drizzle with olive oil and season with salt and pepper and roast in a preheated oven at 200 degrees C for 30 minutes. drizzle some cumin seeds over in the last 10 minutes of cooking.

Ladle some soup into a bowl, top with some roasted vegetables and walnuts and drizzle with some sour cream and chopped parsley. Dinner is served.

Vegetarian food can be very tasty too :)

It is one of the tummies' birthday, the other tummy bought some cup cakes and one of them happened to be a carrot cake. What a nice coincidence!
