Allo Gobi, Spiced Potato And Cauliflower




There has been nothing but bad press leading up to the Commonwealth Games in Dehli which will be officially open today. There are shocking photos of the games village, collapsed footbridge, dengue outbreak and a shooting incident etc. Enough of that I say! Here at the tummies' we choose to celebrate the wonderful food of India instead; I will start with a very simple vegetarian dish that is also one of the most well known dishes. Allo gobi, meaning potato and cauliflower, has been one dish I cook very often when I have vegetarians over for dinner. My childhood friend S thinks all Punjabi girls of marital age would need to master a good allo gobi at least.
P.S This is the dish I learnt from V in Singapore and I have been cooking it ever since.



serves 4 as part of an Indian meal
you'll need;
2 large potatoes, peeled and cubed
1/2 a cauliflower, cut into little florets
2 ripe tomatoes, chopped
1 onion, finely shopped
2 cm piece of ginger, grated
3 garlic cloves, minced
1 tsp black mustard seeds
1 tsp nigella seeds
1/2 tsp turmeric powder
1 tsp cumin powder
1tsp coriander powder
1tsp chili powder
1 tsp garam masala
salt and pepper to taste
200 ml of water



Prepare the potato and cauliflower.



Chopped onion and tomatoes.



Heat up a little oil and add the mustard seeds, cover the wok as the seeds will pop. Add onion and  saute for a minute. Add potato cubes til a little brown on the edges.



Add tomatoes and spices except the garam masala and fry on medium heat for 2 minute. Add ginger.



Add water, cover and simmer for til vegetables are tender. finally add salt and garam masala. Check for seasonings.



Serve as part of an Indian meal.

  5. The bad press over at Delhi is making me not want to watch the Commonwealth - which is a shame because I rather like watching the Commonwealth , even buying tickets to watch it when it was in Melbourne.

    Indian dishes are so so yummy tho - this looks like a winner!
