What do you do when you are craving for a plate of grilled chicken with broken rice? I really did mean grilled, but how often we are given oily deep fried (and dried) chicken with wilted lettuce and the "just to show you that I care" garnishes of sliced tomato and cucumber. And please don't let me go there, "sunny side ups" that clearly have seen better days. Instead of getting disappointed over and over again, I decided it might be easier just to make my own. I have taken out what we don't like and added something we do, you get the idea :)
for the chicken;
marinate 3 or 4 boneless maryland overnight or for at least an hour with the following:
1 tbs of five spice powder
1 tbs of sesame oil
1 tbs of cooking oil
1 tbs of grated ginger
dash of fish sauce
dash of dark soy
salt and pepper to taste
grill chicken on the barbie on medium heat for 5 minutes each side, rest for 5 minutes and cut into pieces
for the salad;
1 tomato, sliced
1 small cucumber, sliced
some flowering garlic chives, cut into 2" length
mint and coriander
salt and pepper
juice of half a lime
mix everything well and divide between 3 plates
for the pickle;
1 small daikon, cut into matchstick size
3 carrot, peeled, cut into matchstick size
1l of white vinegar
6 to 7 tbs of caster sugar
large pinch of salt
sprinkle vegetable with salt, mixed well. Rinsed after 20 minutes, squeeze dry, marinate vegetable in vinegar and sugar solution for at least an hour.
for the chive omelet;
100g of everyday pork mince
handful of garlic chives, cut into bite size pieces
1 red chili , cut into rings
3 eggs beaten
dash of fish sauce
salt and pepper to taste
mix everything well and make a nice omelet in your skillet, cut into 6 wedges
for the dipping sauce;
3 bird chili
4 cloves of garlic
6 tbs of sugar
5 to 6 tbs of fish sauce
5 to 6 tbs of lime juice
1 cup of warm water
In a mortal and pastel, pound chli, garlic and sugar into a pulp, add the remaining ingredients and stir it well.
to assemble;
have as much or as little of cook broken rice on your plate, add a bit of pickle, salad, some omelet and the grilled chicken. Pour a generous amount of dipping sauce over it, now we are talking!!
P.S I also added some spring onion oil on the grilled chicken. simply pour hot oil onto some chopped spring onion.
