We cooked up this beautiful dish to celebrate 3hungrytummies' first birthday just over a month ago. The 2 tummies had chosen the dish from an old Cuisine magazine (New Zealand) and did the shopping so it was a bit of a group effort here. This is a very straight forward dish but the combination of flavours will sure to blow your mind away. Personally I am not sure if the saffron is necessary so feel free to omit that altogether.
P.S To my Muslim friends, halal beef chorizo is now available at good supermarkets.
pre-heated oven at 180 C
serves 3
you''ll need;
3 red snapper or barramundi fillets
2 chorizo sausages, sliced
20 cherry tomatoes on the vine
1 red onion, cut into chunks
3 garlic cloves, sliced
a small amount of saffron strands, soaked in 1/4 cup of hot water (optional)*
1/2 cup of stock
olive oil
salt and pepper to taste
*add an extra 1/4 cup of stock if saffron is not being used.
