I was not looking forward to the early rise on Monday morning after my weekend sleep ins, fortunately it is also time for another Malaysian Monday installment. I made a quick fried noodles with the leftover prawn fritters (adding prawn fritters to mee goreng is a Cameron Highlands' tradition, the same stall also sells Indian rojak). If you prefer the Malay version click here.
P.S One gets a better result by cooking individual servings unless you have a powerful gas stove.
you'll need;
a handful of hokkien noodles, loosen
2 garlic cloves, chopped
1 potato, boiled and cubed
2 prawn fritters, cubed (optional)
1/2 cup of shredded cabbage
1 tomato, cut into chunks
1 green chili, sliced
2 tofu puffs, sliced
1 spring onion, sliced
1.5 tbs of soy
1 tbs of kecap manis (sweet soy)
1 tbs of tomato paste
1 egg
salt and pepper to taste
cooking oil
for the spice paste;
2 garlic cloves, chopped
2 shallots, chopped
2 cm knob of ginger, chopped
1 tbs of turmeric powder
1 tbs of chili powder
1 tbs of Malaysian curry powder
1/2 tbs of toasted belacan (shrimp paste)
1 tbs of sugar
3 tbs of cooking oil
salt and pepper to taste
* Saute minced ingredients with cooking oil til fragrant then add in the rest of the ingredients, cook on low heat til oil separates.
I added prawn fritters to my mee goreng, this is a Cameron Highlands' tradition since the vendor also sells Indian rojak. (one of the main ingredients in the dish)
Saute garlic with a little oil in a hot wok, add cabbage and tofu puffs and continue to cook for a minute.
Add the rest of the ingredients (except the egg), 2 tbs of the spice paste and seasonings. Mix well and cook on high heat for a further minute.
Make a well in the middle of the wok, add a little more oil then crack in the egg.
When the egg is 60% cooked, mix everything up and continue to cook on high heat for a further minute. Check for seasonings.
Serve immediately with extra sliced chillies and a wedge on lime or lemon.

I think I could happily eat at your table for a year. Tofo puffs? I don't know what they are. I am ignorant. Forgive me. But it all looks so good.
ReplyDeleteLooks wonderful...Do you have a recipe for making Malaysian curry powder? I can't find it here. This calls for toasted belacan...I have bought some, but never cooked with it...mine doesn't say toasted...do I need to toast it...or is that something totally different?

ReplyDeleteJust made this for dinner - so delicious! Although I did only use dark soy, kecap manis, tomato sauce and curry powder, plus whatever vegies were in the fridge. One day when I have more time I will make the spice paste - sounds so yummy. This is definitely going in the "quick dinner" reference drawer in my head!
