Day 2 of our carbless diet - We had fish again and this time I pulled a recipe straight out of Gordon Foul Mouth Ramsey's "Kitchen Heaven" cookbook. This is another very simple recipe and it took me less than 20 minutes from start to finish. I took off the foil during the last 5 minutes of cooking to give the dish a more attractive colour. If you are not on a silly diet like us, make sure you serve this with plenty of crusty bread to mop up the delicious pan jus.
serves 2 to 3 with a side salad
you'll need;
3 pieces of pink ling (original recipe asked for cod)
1 punnet of cherry tomatoes (I tripled the amount)
1 chorizo sausage*, casing removed and thinly sliced at an angle
some basil leaves
3 tbs of sherry (optional)
olive oil
sea salt and pepper
*halal beef chorizo is now available at good supermarket
Remove the sausage casing and slice thinly.
Drizzle some olive oil on the base of an oven proof dish (or individual dish as suggested in the book), place the fish fillets in the dish and scatter the cherry tomatoes all over.
Finally place a generous amount of basil leaves over, season well and, drizzle with a little more olive oil and the sherry. Cover the dish tightly with foil and bake it in the pre heated oven for 15 to 20 minutes depending on the size and thickness of the fish. I removed the foil in the last 5 minutes of cooking.
It is such a colorful dish, and should be full of flavor with the chorizo and basil. Yet it seems so simple to make! I'm ready to jump in right now! Good idea to take the foil off! Love the crisp edges.
