Salad Of Rocket, Bbq Sweet Corn And Spanish Onion

A simple salad that takes minutes and the result is just incredible. It goes wonderfully with bbq meat or fish, I served this as a side salad with our risotto dish.

serves 4

you'll need;

a handful of baby rocket

3 corn on the cob, bbq and slice kernels off the cobs

half a Spanish, thinly sliced

Slice off corn kernels after being grilled.

Place rocket in a salad bowl.....

Corn kernels added.......

Spanish onion added, dress with a balsamic and olive oil dressing.......

Served.... delicious!
