Quick Anglesea Spicy Sauce





I came up with this sauce during our weekend away at our friends J and R's holiday home in Anglesea. It's since been improved and its great as a sauce with bbq meat or use it as a marinate. Adjust the number of chilies according to your liking.

makes 1 cup
you'll need;
1 onion, minced
5 bird chilies, minced
10 cloves of garlic, minced
2 tbs of turmeric powder
2 tbs of coriander powder
1 tbs of cumin powder
sugar and salt to taste
juice of 2 lemons

methods;
Blend onion, garlic and chilies into a rough paste. Add dried spices to the paste and mix well. In a very hot wok, add 5tbs of cooking oil and fry paste til oil separates and sauce thicken. Season with sugar and salt, place sauce in a bowl and lemon juice can now be added.

P.S sauce will last for up to 2 months in the fridge so it's worth doing a large batch.
