There are so many new dishes I would love to share with you right now but first let me set a good example and get my MM post out of the way first.
Besides the much loved perfectly poached chicken, one is also likely to find "roast" chicken at most Hainanese chicken rice stalls. It is a lot more popular with children and for those who are not fans of the rather plain looking poached chicken.
This is a quick way of preparing "roast" chicken ala chicken rice stall at home without the never ending steps of coating (with maltose), drying and frying. I will set a later date to show you how to roast a chicken without using an oven the hawker way.
I will be posting the traditional poached chicken version next week, meanwhile you might want to check out the Thai version - khao man gai instead.
oven preheated at 220 C (conventional)
serves 4 as a one dish meal
you'll need;
4 chicken maryland, excess skin and fat removed (reserved)
2 tsp of five spice powder
2 tbs of soy
1 tbs of dark soy
1 tsp of sesame oil
1 tbs of rice wine
1 tbs of grated ginger
2 cloves of garlic, grated
maltose for coating
cucumber slices to serve
tomato slices to serve
for the rice;
reserved chicken skin and fat
2 cups of jasmine rice, washed, rinsed and drained well
2 pandan leaves, knotted
pinch of salt
4 cups of chicken stock
for the chili sauce;
2 long red chillies
6 bird chillies
4 garlic cloves
juice of 1 lime
1 tbs of sugar
2 tbs of light soy
Marinate the chicken with all the seasonings (except for the maltose) for at least an hour.
Place all the ingredients for chili sauce in a blender and blend till fine. Taste and adjust for seasonings.
To prepare the chicken rice - place the reserved chicken skin and fat in a pot and slowly render out the fat.
Remove the solids and add the drained rice to the fat. Fry rice in the fat for a minute or two, making sure all the grains are well coated with the fragrant fat. Add stock, a pinch of salt and the knotted pandan leaves to the pot. Cover and simmer until rice is cook. You of course may do the last step in a rice cooker.
Place the marinated chicken into the reheated oven and cook for 20 minutes. Brush a layer of maltose over the chicken and roast for a further 5 minutes. Remove from the oven and rest for 5 minutes before chopping.
Place the chopped chicken on a bed of the extremely fragrant rice, serve with some cucumber and tomato slices and chili sauce.

Terima kasih marshita! 5 spice powder tu sejenis rempah yang mengandunigi lima jenis rempah, sementara maltose ialah syrup manis seperti madu. Kedua-duanya boleh didapati di kedai runcit Cina atau supermarket. Nama Cinanya 五香粉 dan 麥芽糖.
