Teriyaki Salmon 鮭照り焼き

One of the tummies requested for teriyaki salmon, I couldn't be happier as it is dead easy to prepare and also I was able to continue on the Japanese theme. There is something really irresistible about the combination of soy and sugar, this is a really good example of such combination. Ready made teriyaki sauce can be found easily these days but it is just as easy to make your own. It takes seconds and will save you quite a few dollars too! I have recently posted teriyaki chicken don, click HERE for the recipe.

serves 4
you'll need;
3 x 250 g of salmon fillet
3 spring onions, cut into 3" lengths, grilled
2 tbs of grated ginger
1/2 cup of mirin
1/2 cup of Japanese soy
2 tbs of sugar
dash of cooking sake
toasted sesame seeds

Place everything in a bowl except the toasted sesame seeds.

Place marinated salmon skin sides down onto a baking tray, bake in the oven (pre heated at 200 degrees C) for 12 minutes. Baste the salmon pieces with the marinate every 4 minutes. While the fish is resting, heat up the marinate and let it thicken a little.

Place fish on a plate, pour the sauce over. Drizzle with some toasted sesame seeds and garnish with the grilled spring onions.

Serve immediately with plenty of steamed Japanese rice.

  7. Yum Yum- This dish is a regular at our place and EVERYONE likes it!!! I have never tried making my own teriyaki though- this is something new. My trick to always have fresh ginger on hand is to freeze it whole (with the skin on) then to grate it onto the fish.
