This is a very easy but tasty Thai salad that I make whenever I'm craving for Thai food. Koon chiang meaning Chinese sausage in Thai is quite a popular ingredient in Thai cooking thanks to the sizable Chinese populations there. Very few ingredients are needed for this simple salad so you'll be able to whip this up very quickly next time you crave for something Thai. Less is more? Absolutely!
P.S A perfect beer snack in the sunny garden!
serves 4 as part of a Thai meal
you'll need;
3 lebanese cucumbers, sliced
2 shallots, sliced
4 Chinese sausages, sliced and fried til brown
5 chilies, sliced
2 tbs of fish sauce
juice of one lime
2tbs castor sugar
dash of dark soy (optional but it makes the flavour more complex)
sprigs of coriander leaves
2 spring onions, sliced
Slice Chinese sausages and fry in a pan with a little oil til brown.
Place everything in a bowl.
Just before serving, add fish sauce, lime juice, sugar and dark soy.
Mix well and enjoy!!

Another delicious Thai salad! I've never heard of Chinese sausage being used in Thai salad, it sure looks inviting though.

Another Yummy dish. I love all the Yum. Yum koon chiang is perfect with cucumber. It tones down the heat a bit. Love the sweet and salty taste of the koon chiang too.
