Just when I thought I'll be able to start cooking outdoor, the weather turned cold and windy again. Such is the life in our beautiful Melbourne. I made a soup that is not overly heavy, but hearty enough to counter the chilly spring night. I've been making this for quite a while now, and i think it comes from Vogue Entertaining. Do use the spicy chorizo, if not add some hot paprika just before serving.
serves 4 to 6 as a one dish meal
you'll need;
half a cabbage, sliced thinly
5 tomatoes, chopped
1 onion, chopped
6 chorizo sausages, sliced and browned lightly
1 can butter bean, reserve the water
4tbs tomato paste
1.5l of stock
chopped parsley to serve
Prepare the cabbage and sausages and set aside.
Chop tomatoes and onions and set aside.
Brown sausage slices in batches, this process will make the soup tastes a lot better, plus quite a bit of fat will be rendered out making this a rather healthy dish.
Fry onion with 3 tbs of olive oil til slightly coloured. Add sliced cabbage, fry til wilted and add tomato paste. Add bay leaves and continue to stir until well combined.
Add stock and bring it to a boil, continue to cook for another 10 minutes. Add butter beans and browned sausages, lower the heat and let it simmer for a further10 minutes.
Tip in chopped tomatoes, check for seasonings and let it simmer for another 10 minutes.
Sprinkle some chopped parsley and serve hot.

hey this looks familiar, we used to get this soup in a cafe in Albert park but sadly it's no longer there. Been missing this soup thanks for sharing. Btw how many tummies actually do the cooking?
ReplyDeleteHey love to eat, I think this is quite a classic combination so can't really comment on the A/P cafe but it could be mine who knows. Glad you are able to make it at home, do let me know about the result. Only one tummy is allowed in the kitchen and that's me !! hahahahah
